What Witcher 3 does better IMO: Story and quests: especially the main quest is much more immersive and interesting. But also secondary quests etc. Charaters. Skyrim doesn't have as many memorable ones. The combat mechanics. Witcher 3 isn't perfect, but clearly much better. You can dodge, parry etc. and the combat feels more fluid.
